One Pot Chicken

I subscribe to Real Simple magazine and receive many of their daily/weekly recipe emails. I’ve always loved their offerings, in regards to recipes and to their home and fashion advice. This week, I was intrigued by the simplicity of one of their weekly dinner recipes aptly titled “One Pot Chicken Dinner.” You mean I only have to wash one dish? You don’t have to sell me on that one!

Jeff had been gone at a conference all week, so I wanted to make something hearty and comforting for his return. And since I didn’t have much time that night, this dinner was perfect.

The recipe has 7 ingredients: chicken, potatoes, rosemary, red onion, olive oil, salt and pepper. And all you have to really do is throw it all together in a pot, cook for a little less than an hour, and it’s done!

One Pot Chicken Dinner

Serves 4

2 small red potatoes (about 1 pound), cut into thin wedges

1 red onion, cut into wedges

2 sprigs fresh rosemary

2 tablespoons olive oil

kosher salt and black pepper

2 chicken wings and 2 thighs, skin on


Heat oven to 400º F. In a large roasting pan, toss the potatoes, onion, thyme, oil, 1⁄2 teaspoon salt, and 1⁄4 teaspoon pepper.

Season the chicken with 1⁄2 teaspoon salt and 1⁄4 teaspoon pepper and nestle it, skin-side up, among the potatoes and onions.

Roast until the chicken is cooked through and the potatoes are tender, 40 to 50 minutes.
